Apple Quinoa Breakfast Bars

A healthy breakfast option that can be pre-made so you can grab on the go, starting your day off right!

What You Need:

  • 1 cup unsweetened organic apple sauce
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 cup coconut oil
  • 2 eggs
  • 1.5 cups cooked & cooled quinoa
  • 1.5 cups rolled oats
  • 1/2 teaspoon baking powder
  • 1 apple peeled and chopped into 1/2 inch chunks

How To Make It:

  1. Heat oven to 350°F.
  2. Spray a 8×8 inch baking dish with oil and set aside.
  3. In a large bowl, stir together the apple sauce, peanut butter, vanilla, cinnamon, coconut oil and eggs.
  4. Mix in the cooked quinoa, rolled oats and baking powder until completely incorporated.
  5. Fold in the apple.
  6. Spread the mixture into the prepared baking dish, spreading it to each corner.
  7. Bake for 40 minutes, or until a toothpick comes out clean.
  8. Cool completely before slicing and storing.
  9. StorageStore in the fridge for 5-6 days or the freezer for up to 3 months.
