No-Bake Granola Bars
Ingredients
- ¼ cup coconut oil, melted
- ⅔ cup creamy peanut butter
- ½ cup honey (or maple syrup)
- 2 teaspoons pure vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 cup Bob’s Red Mill old-fashioned rolled oats
- 1 cup crispy rice cereal
- ½ cup chia seeds
- ½ cup semisweet chocolate chips
Instructions
- Line an 8×8 pan with parchment paper and spray with cooking spray. Set aside.
- In a medium bowl, combine the melted oil, peanut butter, honey, vanilla, cinnamon, and salt and stir well.
- Add the oats, crispy rice cereal, chia seeds and chocolate chips. Stir well to combine.
- Pour the batter into the prepared pan and smooth the top.
- Cover and refrigerate for at least 2 hours to allow the granola bars to set up.
- Slice and serve. Store extras, covered, in the refrigerator for up to 1 week.
