Gingerbread Cashew Butter

A delicious gingerbread cashew butter that is a great source of healthy fats!

What You Need:

  • 2 cups NOW Foods Raw Cashews
  • teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 2 tablespoons molasses
  • 3 tablespoons NOW Foods Coconut Oil (plus 1 tablespoon off to the side)

Instructions

  1. Preheat oven to 350 degrees
  2. Toss cashews with 1 tablespoon of oil and roast for approximately 10 minutes, stirring every 3-4 minutes
  3. Allow cashews to cool completely
  4. Add roasted cashews, spices, molasses + remaining 3 tablespoons of coconut oil to a food processor + blend until smooth
  5. Store in airtight container in refrigerator for up to 2 weeks
