Recipe of the Week – Blueberry Baked Oatmeal Cups
These Baked Blueberry Oatmeal Cups make a great on the go breakfast and pack in 11 grams of protein. Bake up a batch and have breakfast made for the week.
What you need:
- 2 cups rolled oats
- ¾ cup blueberries
- 2 egg whites
- 1½ cups unsweetened almond milk
- ¼ cup maple syrup
- 1½ teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon salt
How to make it:
- Preheat oven to 375˚F (190˚C).
- In a bowl, add the oats, blueberries, egg whites, almond milk, maple syrup, cinnamon, vanilla, baking powder, and salt, and stir to combine.
- Transfer the mixture between 6 lined muffin tins.
- Bake for 20 minutes. Let cool before serving.
